Cooking Class Day
After a nice coffee and introduce ourselves and the Oaxacan traditional cuisine to you, we will choose the menu for the day, then we will go to the back yard and we will colect some fresh herbs and ingredients from our small organic farm, after that we will walk to the Xoxocotlan local market to select and buy the freshest remaining ingredients for our fantastic oaxacan feast.
(markets is 3 minutes walk) then, back to the kitchen, i will show you how to process masa to make fresh tortillas, quesadillas, tacos, tetelas and empanadas stuffed with fresh quesillo, squash blossoms, mushrooms and much more, also i will show you how to cook a spicy red sauce and mild green tomatillo soft sauce with ingredients picked from our organic farm to enjoy our appetizers on a nice set table.
After enjoy snacks we will start to cook a real oaxacan 3 course meal (soup, main, dessert) it could be; mole amarillo or costillas en salsa verde (fried pork ribs on tomatillo sauce) or mole encacahuatado (peanut mole) and much more. Choose your own mole adventure!
We will go to the mill to process our mole & horchata water. You will also choose what dessert you want to make like; rice pudding or fried plantain molotes with cheesy cream or more options to choose from.
Sip a nice mezcal and refresh yourself with a beer enjoying a real traditional oaxacan feast under the shade of the trees
This workshop is completely hands-on and you will be the main chef to cook your own feast, one of the aims of this cooking experience is to show you how to reproduce at home (all over the world) the traditonal Oaxacan plates that you decided to cook during cooking class and more. to be able to do it, i will share a bunch of recipes with you so you can have the chance to experiment with new flavors and ingredients
